Recipe: Puliyoggare pudi

Puliyogare Powder

Required ingredients - 

1. Saarina Pudi - 100gms

2. Dry tamarind powder - 50-60gms. If dry tamarind powder is not available, cut tamarind into small pieces, keep under sun to dry for 1-2 days so that it gets grounded finely. 

3. Shredded jaggery - 50-60gms

4. Salt - 40gms (According to the taste)

5. Dry coconut , shredded - 100gms

6. White sesame seeds - 50gms

7. Turmeric - 1 spoon 


Procedure - 

1. Roast the shredded dry coconut, turmeric powder and white sesame seeds for 4-5 minutes under medium flame. 

2. Ground to a fine powder

3. Grind 

   A. Rasam powder

   B. Tamarind power

   C. Salt

   D. Jaggery 

   To a fine powder. 

6. Check for huli, sihi, uppu, khara and add if anything required. Grind again if you add anything extra.

7. Add the dry sesame seeds + coconut mix and grind for 10-20 seconds till everything mixes well. 


For Oggarane- 

Heat 2 spoons of oil

Add 1 spoon of mustard seeds and let it splitter. 

Add 1 spoon of Urad dal + 1 spoon of Chana dal and roast

Add a handful of fresh curry leaves

Add a handful of groundnuts

Once groundnut starts spluttering, add 4-5 red chili cut into small pieces(for aroma only)

Turn off the stove immediately.


Mix oggarane to the puliyogare powder 


Puliyogare tastes best with 

1. Rice should be prepared well ahead and cold

2. Add 2-3 spoons of groundnut oil

3. Fresh coriander leaves
